Taco Seasoning

After using up a massive container of McCormick brand taco seasoning over the course of two years, I decided never ever to buy that stuff again. It's salty as all hell. Bleh.

Fortunately, there is allrecipes.com and this recipe for taco seasoning, which worked very well and is composed entirely from dry off-the-shelf spices. The family loves it, but it doesn't taste quite right to me... think it needs more paprika. The recipe below is my variation on the link above. :D

Recipe
1 tablespoon chili powder
1 1/2 teaspoons paprika
1 1/2 teaspoons ground cumin
1 teaspoon ground black pepper
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon red (cayenne) pepper, flakes or ground
1/4 teaspoon dried oregano
1 tablespoon corn starch (optional)

Mix all the ingredients together in a small bowl. This recipe makes enough seasoning for roughly 1.5 lbs of meat, depending upon your preference for stronger or weaker flavoring. I've used it on ground beef and cubed pork, and I'm betting it'll work fine on steak or chicken. The corn starch helps thicken the sauce when simmering the meat, or, if you make the seasoning to store for later use, the corn starch will keep it from clumping together.

To use the seasoning for tacos, mix it with about 1/2 cup of water. Brown the meat in a skillet until fully cooked. Drain grease and juices from the pan and add the seasoning slurry. Return skillet to low heat and simmer for about 20 minutes, stirring occasionally.
