Okay, this is my favorite thing to put on the table for a holiday dinner. It's so sweet, it might as well be served with dessert... but it's not a dessert. Mwahaha.
1 large can Bruce's yams (sweet potatoes), 29 oz
1/2 cup white sugar
1 egg
2 Tablespoons butter or substitute
3 Tablespoons milk
1/2 teaspoons vanilla extract
1/2 cup brown sugar
1/2 cup walnut pieces
3 Tablespoons flour
2 Tablespoons melted butter or substitute
Empty can of yams (and the juice contained therein) into a medium saucepan. Add water to cover yams. Bring pot to a boil and cook for 15 minutes, or until yams are tender. Drain cooked yams and mash them. Add sugar, egg, butter, milk, and vanilla, and combine well. Spread this mixture evenly in a buttered casserole dish.
In a separate bowl, combine brown sugar, walnuts, flour, and melted butter - stir these together to make a sandy topping. Sprinkle this topping evenly over the yam mixture. DO NOT COVER. Bake at 350 F for 35 minutes or until sweet potato layer does not stick to a knife inserted in the center and topping appears evenly melted and cooked.
