Puppy Chow

The condensed version of the puppy chow post.

Recipe
One (14oz) box crispy corn cereal squares (Chex brand is the traditional choice)
1.5 cup semi-sweet chocolate chips
1 cup creamy peanut butter
0.5 cup butter or margarine
1 tsp vanilla extract
2 cups confectioner's sugar, plus some extra if needed

Using a double boiler or two-pot rig, melt the chocolate chips. When most of the chips are melted, add the peanut butter, margarine, and vanilla. Stir until mixture is uniform and smooth.

Remove chocolate mixture from heat and pour over the cereal in a large bowl. Fold together the cereal and chocolate coating to cover all pieces thoroughly. Allow the coated cereal mix to cool for 5 minutes.

In a large container with a snug-fitting lid (XL Tupperware works well), put down a layer of 1 cup of powdered sugar. Dump the chocolate-coated cereal into this container, then sprinkle with the remaining 1 cup of powdered sugar.




Tightly seal the container and shake cereal mix in the powdered sugar to coat all pieces, stopping occasionally to open the container and break up any large clumps of cereal. Add more powdered sugar if necessary. 


Store in an airtight container in a cool, dry place.
